味わいの特徴
Junmai Ginjyo is carefully brewed in a small brewing tank, and each sake is separated by the timing of pressing in a traditional tank (fune). This is a unique and popular series that allows you to compare the exact same sake. When the bags become thin after pressing, they are reloaded and further pressurized. This process is called "Yomegitori. The alcohol content is high and the sake is firm and dry, but it is almost never available on the market.
