- Aizan" is a multiple crossbreed of "Omachi" and has outstanding water absorbency, even better than Omachi, which has excellent water absorbency. On the other hand, the softness of the grains makes it a sake rice that requires particularly delicate brewing. The result is a sweet, bittersweet sake that lives up to the character for "love" in the name Aizan. The aging process gives it an exquisite flavor that combines a gorgeous aroma with the sweetness of the rice. Junmai Daiginjo brewed with rice polished to 45% Aizan. It has an exquisite combination of gorgeous aroma and dense rice sweetness.
