This daiginjo-shu is made by polishing "Yamada-Nishiki" rice up to 38%, combining the skills of the Tamba Toji, warming the rice in the brewer's hands, and then carefully and lovingly brewing the superb product, which is then lowered into a bag and pressed as if collecting drops from bamboo grass leaves. Enjoy the fresh harmony of the fruity aroma of freshly squeezed new sake and the light, refreshing mouthfeel.
