- The area surrounding our company, Echigo-Tsurukame, is dotted with ancient tombs and ruins. A long time ago, a leader called the "King of Koshi" ruled this area, and the mountainous region around the area was called "Koshiwa" (越王). In honor of this name, we named our highest sake "Koshi O". This Junmai Daiginjo is made from 100% Yamada-Nishiki, the highest grade of rice suitable for sake brewing, produced in the special A district of Hyogo Prefecture. Yamada-Nishiki is polished to 35% and carefully selected to produce the ultimate sake. It has an elegant ginjo aroma and a delicate, mellow taste.
