We spotlighted "dry" sakes that are not part of the regular Iyo Kagiya lineup. Even if we say "dry" in one word, each person's sense of sweetness and spiciness differs depending on their physical condition, sense of taste, and compatibility with food. There is something interesting about sake that cannot be measured by numbers alone. In this sake, our first priority was to achieve the coexistence of the umami of rice and the dryness of sake. As is typical of Kagiya, the flavor increases as the sake ages, and the first touch is a soft spread of the umami and tenderness of the rice. After that, it goes into the dry and lingering aftertaste that can be enjoyed again through the throat. The combination of umami and dryness makes you want to drink it again.
