味わいの特徴
While the average acidity of the regular Kagiya lineup is around 1.4, this sake has an acidity level of 2.0 or higher. This sake is characterized by the balance between the acidity that creates the outline of the sake and the umami that follows it, and has a "Rich Taste" that is not found in the conventional taste of Kagiya. It is a new Kagiya that expands the range of compatibility with a variety of foods, including meat dishes. The assertive acidity is a feature not found in conventional Kagiya. We hope it will become a new type of sake for both Japanese and Western cuisine.
