- A New Challenge for Daiginjos Daiginjo-shu has the three key elements of aroma, flavor, and sharpness. We aimed to make it aromatic, flavorful, and light with a taste reminiscent of Pinot Noir red wine. To create the aroma and flavor, we used Yamadanishiki alcohol produced in-house.
