味わいの特徴
MK series, brewed with white malted rice and characterized by sweet acidity MK-Z is an abbreviation for MansakuKouboProjectZ, a sake that challenges a completely different taste from that of Mansaku no Hana. White koji, a type of koji used for shochu (distilled spirit), was blended to create a unique sour taste. Since we crossed a low-acid yeast with white koji, the acid composition has a very high percentage of citric acid. Hinomaru", our original raw material, is used for the kake rice, and the citric acid and umami flavors are mixed together to create a complex taste. Partially using white malted rice, citric acid and complex acidity are densely mixed.
