味わいの特徴
In 1907, the brand name "Ryusei" won the first prize at the National Sake Competition in Japan. The brand name "Ryusei", which once won first place in Japan at a national sake competition, was a junmai-shu made from Omachi rice, the highest grade of rice used at that time. A century after that honor, the Junmai Daiginjo that we brew with the aim of making the best sake possible is still a pure rice sake brewed using only Omachi rice from the Takashima area, the birthplace of Omachi. This sake was brewed using modern technology to push the limits of what is possible today, using Omachi rice, which is considered unsuitable for high polishing, to 40%. The sake is then aged until it reaches its full potential, and is the pinnacle of what we can produce today. We decided to have the name of the founder "Zenshichi" on the sake only, in order to engrave the respect for the founder on the sake as a brand and on our own hearts. This is the one and only ultimate sake brewed by concentrating the brewery's strength with skill and spirit.
