Hananomai Junmaisyutyokarakuchi

味わいの特徴

It is brewed with 100% Shizuoka rice and Shizuoka yeast. It is a junmai-shu with a slightly dry sake strength of +3, but with a full-bodied rice aroma. The refreshing aroma is reminiscent of green apples, and in the mouth it has a raw material aroma reminiscent of cooked rice. Because it is made to be dry, it has little residual sugar and is characterized by its concentrated rice-derived umami. Unlike most dry sake, the dryness is expressed by the sharpness of the acidity. After a mild sweetness, the acidity is clear and penetrating, and the lingering aftertaste is moderate bitterness and minerality with umami. When chilled, the acidity becomes more sharp and the wine is more delicate.
