This powerful junmai is brewed using a traditional method called the "fast brewing" method, which takes nearly twice as long and labor-intensive as the common method of making sake. It has a good balance of the five tastes of sake, "sweet, sour, spicy, bitter, and astringent," and is a junmai sake with a rich, crisp acidity and deep flavor that is good warmed or cold.
