This spring-only junmai ginjo sake is brewed with "Gohyakumangoku," a variety of rice grown with great care by farmers in Kokonoe Town. To enjoy its refreshing acidity and mellow sweetness, we use Association 1801 yeast (a yeast that produces a fruity aroma and acidity). Association 1801 yeast (a yeast that produces a fruity aroma and acidity) is used to give the sake a refreshing acidity and rich sweetness.
