味わいの特徴
Our highest quality Junmai Daiginjo, all made from "Yamadanishiki" rice suitable for sake brewing. The entire amount of rice is made from Yamada-Nishiki, a rice suitable for sake brewing, and is carefully and slowly refined to 35% over three days and three nights. We then let the rice dry for two weeks, and slowly let it mature. The rice is then allowed to wither for two weeks and then slowly matured over time. The "moromi" is then fermented at low temperature for two weeks. Junmai Daijiru is made from rice only. rice only.
