- We want to make sake that has a gorgeous aroma and is as dark as possible. Achieving both of these goals is extremely difficult and a dream come true. After years of research, this dream has finally come true. This sake was created by using 100% Yumesansui, a high quality sake rice grown under contract in Okumikawa, manually making malted rice, and meticulously managing the brewery's own malted rice. It is a junmai ginjo-shu with a "thickening" and aromatic flavor that has never been experienced before, with an alcohol content of over 18 degrees Celsius. We hope you will enjoy this confident work of our brewery to your heart's content. Yumesansui Juwari Hatsushibori Oku "Nama" is the first limited release to commemorate the first new sake (nama-zake) squeezed this year. It is a seasonal sake.
