- Sake brewed during the severe cold season is matured over the summer and shipped at the beginning of autumn when it is in a good state of maturity, which is called "hiyaoroshi". This product is junmai ginjo sake made entirely from high-quality sake rice "Yumesansui" grown under contract in Okumikawa. It features both a gorgeous aroma and a rich, mellow flavor.
