Tokujiro Watanabe, the second generation of the family, named the sake "Mino, a beautiful dark place" with the hope that it would have a rich taste like "Nishiki" (brocade). The name "Nishiki" was derived from his wish that the sake would be as rich in flavor as "Nishiki". Today, we continue to brew sake using the same production methods as at that time.
