- This is a very luxurious sake made by refining Yamada-Nishiki, which is said to be the best raw material rice, to 40%, and bottling the junmai daiginjo-genshu slowly at a low temperature without filtration and without fire-ignition. It is characterized by an elegant ginjo aroma and the refreshing taste of daiginjo with the unique breadth of flavor of junmai-shu (sake made from only rice and rice malt).
