- This fresh, unfiltered, unfiltered sake is made using water from the Nagara River, one of the 100 best waters in Japan. The mash is carefully brewed at low temperature, slowly and luxuriously pressed in a traditional wooden vat, and bottled as it is. It is characterized by its elegant and fruity ginjo aroma and mellow flavor unique to unfiltered unpasteurized sake.
