The mash is roughly strained to leave nigori (rice solids) so that the unique texture and flavor of the rice can be fully enjoyed. It is characterized by the soft sweetness of the rice and mild acidity. This nigori sake is neither too thick nor too sweet, and is light and very easy to drink.
