- This sake is brewed with rice produced in Wanouchi-machi, Gifu Prefecture - the rice used by the Tokugawa Shoguns. Polishing ratio 60 Wanouchi-cho has a history of producing Gozen-mai (Imperial rice) for the shoguns' kitchen as a territory under the direct control of the shogunate since the Edo period, and the quality and management of the rice was highly regarded. The toji (master brewer) of Kakamigahara, one of the best sake breweries in Gifu Prefecture, has been diligently brewing this sake using only such gozen-husk (gozen rice).
