- This junmai ginjo-shu is made by polishing up to 60% Gifu Prefecture-grown common mai rice and brewing it only with high-quality underground water from Ogaki, the "City of Water". It goes well with nabe (hot pot), sukiyaki, and sashimi in the fall and winter, and has an extremely flavorful and refreshing taste when heated.
