Our signature ume (plum) sake made by soaking local Akaban-grown green ume (Kojo ume) in Omachi rice wine for over a year, blended with "hime togarashi" (red pepper) from Okutsu, Kagamino-cho, Okayama Prefecture, is a favorite of connoisseurs. The mellow sweetness of the plum wine and the subtle sourness with a tangy taste are truly appetizing.
