味わいの特徴
Chokyu" was named in the hope that it would be a long-loved sake in its hometown of Wakayama for a long time. This junmai ginjo "Chokyu" series was brewed with the aim of "surpassing" Chokyu. All of the rice used was Yamada-Nishiki produced in Hyogo Prefecture, which is known as the "king of sake rice" and has a reputation for being a high quality sake rice.  The sake is clear and has a firm core of sharpness, expressing the flavor and sweetness of rice typical of Yamada-Nishiki. Since it has been aged since 2016, you can enjoy its deep flavor. The "Chokyu" series is available in limited quantities and will be replaced by the next brewing year's matured product when the current product is out of stock. As of January 2021, it is 28BY.
