The rice is polished to a higher ratio (usually 70%) to remove impurities, resulting in a robust flavor with a dry aftertaste that goes well with warmed sake, and a refreshing taste that goes well with cold sake. It has the strong flavor of "Honjozo Tsugaru Preface," and the clean mouthfeel of "Honjozo Yuki Preface," making it an authentic dry Honjozo sake.
