味わいの特徴
The "u" is the Chinese character for gentle. This Junmai-shu is a modern Yamahai-brewed Junmai-shu that borrows the power of lactic acid bacteria surviving in the natural world. It is characterized by fresh acidity, juicy and gentle sweetness, and an alcohol content of 13% that does not make you tired of drinking. This sake is naturally brewed using only rice grown around the brewery, Hakusan 100-year old water, and in-house cultivated yeast to express the terroir. It can be enjoyed cold, at room temperature, or warmed.
