- This sake was bottled shortly after the unrefined sake was pressed this spring, prior to the removal of the slag, and aged in the bottle for six months at an ice temperature of -5°C. The slag, which was noticeable early in the spring, has melted away and the sake has a noujun flavor. The sake is now well balanced with the freshness of the flavor. The sake still retains a freshness, allowing you to enjoy both freshness and ripeness.
