This is a prototype type Junmai-shu made entirely from Miyamanishiki, a rice suitable for sake brewing. The concept is a special modern food sake with a low-alcohol base, a slightly effervescent taste, and impressive sweetness and acidity. Using the brewing techniques and experience we have been challenging with the Tsushimaya Gaiden series, we have greatly expanded the range of Tsushimaya's flavor expression and evolved it to a new level. We will continue to face sake with the aspiration of spreading our wings as far as we can.
