味わいの特徴
This special edition of "Yonotori" was brewed for Torishiki, one of the best yakitori restaurants in Japan. The "Yonotori" is a noble sake overflowing with flavor and sweetness, and has been reconstructed as a pairing sake more suited for eating and drinking occasions. Of particular note is the use of "secondary fermentation in the bottle" to express a crispness that surpasses the sweetness, and the inclusion of yeast-derived carbon dioxide gas in the sake. The oli containing the yeast is completely removed, allowing the sake to be enjoyed with a clear throat. This rare sake, available only at a limited number of restaurants that mainly serve Torishiki, will be offered as a special treat for Craft Sake Week!
