味わいの特徴
This special edition of Yonotori was developed in collaboration with Yoshiteru Ikegawa of Tori Shiki, one of the best yakitori restaurants in Japan. We have re-tailored a kijo-zake full of flavor and sweetness as a pairing sake for yakitori. In order to express not only the sweetness but also the sharpness of the sake, carbon dioxide gas from the yeast is sealed in the sake using the "secondary fermentation in the bottle" method. In addition to the usual wooden vat brewing process, a portion of the finished sake is stored in wooden barrels to enhance the mellow cedar nuance. We hope you will enjoy this "Yonotori" made by yakitori, for yakitori, with yakitori.
