Niseko Shuzo, founded in 1916, is a sake brewery that is particular about "undiluted sake without water adjustment," water, air, and environment. The water used is fresh snow water from the Niseko Weiss Mountains and "spouting spring water" from Mt. The brewery is located in an area with heavy snowfall, which is ideal for low-temperature fermentation. We also use a lot of local rice and make sake using Fukagawa's Ginpu, Imagane's Comet/Ginpu, and Kyowa's Hatsushizuku. The Niseko resort is now booming as an international ski resort with visitors mainly from Australia, and we aim to integrate it with Japanese culture. (Hokkaido Sake Brewers Association)
