- Shiwa Sake Brewery is a small sake brewery located in Shiwa Town, Shiwa District, Iwate Prefecture, known as the “birthplace of the Nanbu Toji.” Founded in 1903, the brewery was established when the first-generation founder, Kihei Hirota, took over a local sake brewery that was highly regarded in the area at the time, and has continued brewing sake ever since. “Koki,” created with the aim of producing “sake that brings joy to a wide range of people,” remains the brewery’s flagship brand to this day. Currently, led by Toji Ono—the first female Nanbu Toji—the brewery is dedicated to exploring the theme of “the umami of rice.” Starting with the 2017 vintage, the entire “Koki” brand has transitioned to the “Sanki Amazake Moto” fermentation method. To further refine our brewing techniques and get closer to the essence of “the umami of rice,” the entire brewery is working together with dedication. In recent years, we have also launched the "Shisora" series, a new limited-distribution brand that pursues a fresh and juicy flavor profile.
