- Founded in 1896. Originally located in Otsuchi-cho on the coast of Iwate Prefecture, it was rebuilt in Morioka City in 2013 due to the earthquake disaster. Led by Ryunosuke Furudate, the sixth-generation brewer and toji (master brewer), the brewery places great importance on brewing sake that is in tune with the times, combining the traditions of the Nanbu Toji, which originated in Iwate Prefecture, with the latest microbiology and technology. Temperature, rice conditions, and fermentation of the unrefined sake are a dialogue with living creatures that cannot be determined by experience-based guesses and calculations. We face the minute changes in the expression of the bubbles and the aroma on a daily basis, and brew the best drop of sake by sharpening our five senses. We create sake with a fresh, clean sweetness and aroma so that the younger generation can also enjoy sake. To make a strong impression on those who pick up the sake for the first time, the brand name is "AKABU" in Roman characters rather than in kanji. The label also features an illustration of a red samurai, which symbolizes "Akabu," the name of the brewery. We are striving to make sake that will be picked up again even by those who have already had it once, and to make it a favorite sake of many people, and we are constantly evolving our sake brewing.
