Aiming for a sake quality based on the concept of the ultimate food sake. Founded in 1873. The brand name "Atago no Matsu" has been around since the time of its establishment and has been well-known locally. In 2000, Iwao Shinzawa (5th generation), the current president of the company, became the youngest toji (master brewer) in Miyagi Prefecture. The following year, a new brand, "Hakurakusei," was released exclusively to special distributors. At a time when only the words "aperitif" and "after-dinner drink" existed, Hakurakusei was a pioneer in the field of "in-dinner drinks," aiming to create a sake that would complement any dish. Today, based on the concept of "the ultimate food sake," Hakurakusei is used in many starred restaurants both in Japan and abroad. After the Great East Japan Earthquake in 2011, the company decided to relocate its manufacturing facilities from Sanbongi, Osaki City to Kawasaki Town, Shibata County. In November of the same year, production resumed, and the head office, which was completely destroyed, was rebuilt in August 2013. In 2018, Watanabe Nanami (22 years old at the time) took over as toji (chief brewer), becoming the youngest female chief brewer in Japan. Even after stepping away from the role of toji, Shinzawa continues to guide the brewing process with an eye toward the sake that customers drink. The company's products include sake such as "Hakurakusei" and "Atago no matsuri," as well as liqueurs such as plum, yuzu, black tea, and yogurt sake. The brewery is committed to thorough refrigeration control, and all bottled sake, from cup sake to high-end sake, is stored in a refrigerator at minus 5 degrees Celsius. The sake is shipped young and fresh from the brewery, and is adjusted to be in the best condition at the time it arrives at the customer's door. While taking care of the quality of sake shipped domestically, the company also exports to 17 countries.
