- Shinmasa Brewery's motto is to make only "junmai" (pure rice) using Kyokai No. 6, which was discovered in the company's premises over 90 years ago. We also use only the "Kimoto" method, an additive-free method from the Edo period, as the sake mother. We also use only the traditional koji making method called "kita koji method" to make our sake. We are also very proud of the fact that we own 45 wooden vats and brew all of our sake in them. The company is also very particular about the rice used to make its sake, and promotes pesticide-free cultivation of rice in the Uyo district on the outskirts of Akita City, where more than 30 hectares of rice are grown. Shinsei Brewery itself operates more than 12 hectares of rice fields, and the number is still expanding. In 2023, the company plans to construct a "Mokoke Kobo" (wooden barrel workshop) on its own premises, a manufacturing facility that will carry on the tradition of wooden barrel production. Shinmasa Sake Brewery will continue to make efforts to preserve, foster, and pass on the traditional fermentation culture of Japan.
