Since its founding in 1852, Shinsei Shuzo has remained committed to sake brewing deeply rooted in tradition. As the brewery where the sake yeast strain “Kyokai No. 6” was discovered approximately 100 years ago, and as one of the pioneers of ginjo sake, it has earned a reputation as one of the premier breweries in the industry. Under the leadership of the eighth-generation brewery owner, the brewery has been reborn with a renewed commitment to thoroughly pursuing traditional brewing methods, such as "kimoto-style brewing" and "wooden barrel fermentation." We have established a “Wooden Barrel Workshop” on our premises to preserve the techniques of wooden barrel brewing. Furthermore, in the Uyo district on the outskirts of Akita City, we promote pesticide-free cultivation across more than 30 chō of farmland, establishing an “agriculture-brewing integration” system that handles everything from rice cultivation to brewing. Indeed, “Shinsei” is Japanese culture in a bottle and the very essence of traditional romance.
