- Shinsei Shuzo is the birthplace of the sake yeast "Kyokai No. 6," discovered approximately 100 years ago. As one of the breweries that pioneered ginjo sake, it gained renown as one of the industry's premier breweries. However, under the eighth-generation master brewer, it transformed into a new entity, thoroughly pursuing traditional brewing methods such as "kimoto-style brewing" and "wooden barrel fermentation." In recent years, it has established an integrated farming and brewing system, managing its own rice fields and overseeing the entire process from cultivating the raw rice to brewing. Shinsei is truly the essence of Japanese drinking culture and the very embodiment of savoring traditional romance.
