- Founded in 1919 (Taisho 8). The first generation, Koichi Kobayashi, was the head brewer under Ubee Sato at Shinsei Shuzo when the No. 6 yeast strain was discovered in 1930 (Showa 5). In 2004 (Heisei 16), Tadahiko Kobayashi, the third-generation owner, became Akita Prefecture's first "brewery owner-toji." Since switching all brewing to small-capacity tanks designed for daiginjo sake, the brewery exclusively produces high-quality junmai sake in small batches. In 2001 (Heisei 13), a new company building was constructed alongside a reinforced concrete apartment building. Leveraging its features of insulation and full air conditioning, the brewery achieved year-round brewing—rare for a micro-brewery with a capacity of about 600 koku. This enables the year-round provision of fresh new sake. While its appearance—a "brewery on the first floor of an apartment building"—may not immediately suggest a sake brewery, the sake-making process fully implements the Akita-style low-temperature fermentation technique, honed by the traditions of this renowned sake-producing region, in every batch.
