- Founded in 1688, Hikobei Watanabe I began brewing sake in the town of Gojome, Akita Prefecture. Gojome-cho, Akita Prefecture, is located on the Oga Peninsula, east of Hachiro Lagoon, famous for Namahage, and has many industries using Akita cedar as a material. A local specialty, "dumako nabe" made with fresh rice, is a superb dish in which the broth from the local chicken is soaked into the dumako (rice that has been crushed into dumplings). There is also a morning market in front of the brewery that has continued for 500 years. The market developed from a place to exchange mountain and sea foods: wild vegetables in spring and mushrooms in Akita. The brewery is located facing the morning market street. The brewery uses groundwater from the brewery's own grounds for its brewing water, and the rice used for its ingredients is grown under contract with a farmer who belongs to the local "Gojome Sake Rice Research Association. The brewery aims to create sake that evokes the culture of the town of Gojome, Akita Prefecture, based on the themes of "local rice," "local water," and "local people. In 2017, the company also launched an agricultural corporation and is considering initiatives to look to the future of agriculture together with its contract farmers.
