- Founded in 1902. The building, which still retains the appearance of those days, is a registered tangible cultural property of Japan. The brewery brews sake with its own cultivated yeast, which has been developed and selected over the past 30 years, using carefully selected sake rice grown by the brewery staff and local contract farmers as the main raw material. Based on the concept that "Sake is brewed by microorganisms, not by people," we brew our sake without adding water, charcoal filtration, or oaring. This is a unique brewing method that allows the microorganisms to do their work and allows the sake to be enjoyed in its naturally brewed state.
