- Founded in 1487, Hiraizumi Honpo is the oldest sake brewery in Tohoku and the third oldest in Japan, and has been brewing sake in NIKAHO City, Akita Prefecture for 27 generations. The brewery specializes in "Yamahai (mountain hakai) brewing," which takes advantage of the spring water from the famous Chokaisan (Mt. Chokaisan) and the harsh natural environment. Since the 2023 brewing year, the company has shifted all of its sake to Yamahai brewing. The main brands are "Tobirazumi," which is suitable as a food sake, and "Tobiteiru," a unique sake that makes the most of its acidity. Currently, the company is working with local farmers to cultivate rice and brew sake with a focus on the difference in brewing water, and is communicating Akita's charms to the world.
