- Hiraisen Honpo was founded in 1487 (the first year of the Chōkyō era) during the Muromachi period. As the oldest sake brewery in the Tohoku region and the third oldest in Japan, we have carried on the tradition of sake brewing for 27 generations in the naturally rich city of Nikaho, Akita Prefecture. We use spring water from the renowned Mount Chōkai as our brewing water and specialize in the “Yamahai-style” brewing method—a Hiraisen tradition nurtured within this harsh natural environment. Starting with the 2023 brewing season, we have transitioned to using the Yamahai method for our entire production. Our flagship brands are “Hiraisen,” designed to pair with meals, and “Hitsuzumi,” a distinctive sake that highlights its natural acidity. We are currently actively engaged in rice cultivation in collaboration with contracted farmers, primarily in the local area, and are also expanding overseas by leveraging the compatibility of our sake with local cuisines. We are committed to sharing the charm of Akita not only within Japan but also with the wider world.
