- Our company motto is "Japanese sake brewed in harmony". Our brewers have inherited the techniques handed down from the time of the company's founding and support each other in our efforts to create good sake. We have two breweries, "Dewazuru Brewery" and "Kariho Brewery," and we are particular about the water and sake rice we use for brewing. Most of the local rice used for sake brewing is grown by the brewery staff, and the rice is milled in-house. The brewery produces its representative brands, "Dewazuru," "Kariho," and "Yamato Shizuku. (1) Dewazuru: Under the slogan "Sake brewing starts from rice making," Dewazuru produces pure rice sake, mainly using the traditional sake yeast method. (2) Kariho: Brews junmai sake mainly using the Yamahai method, using the "fune shibori" method, which is rare in Japan. (3) Yamato Shizuku: The brewer is responsible for everything from rice cultivation to brewing, and uses mineral-rich natural water that springs from a 15-million-year-old geological formation.
