Tendo City in Yamagata Prefecture is known as the home of shogi pieces and hot springs. In 1892, the first-generation founder, Seijiro Nakano, named this sake “Dewa Sakura” in honor of the beautiful spring scenery of Mt. Maizuru—located at the heart of the city—when it is adorned with cherry blossoms in full bloom. Since our founding, we have been supported by the warm hospitality of the local community, abundant water, and high-quality rice—all gifts of our blessed natural environment. Pursuing “high quality, local focus, and fair prices,” and building on the overwhelming support of our local community, our sake is now enjoyed by people across Japan and in over 60 cities across 35 countries worldwide. Our dedication to sake brewing over the years has led us to be honored with the title of “pioneer of ginjo sake”—a recognition we consider humbling—yet our founding principles remain unchanged. Driven by the single-minded desire to “let as many people as possible discover the beauty of sake,” we remain committed to traditional, handcrafted methods while continuing to brew sake that resonates with the sensibilities of our time. Under the motto “Making Ginjo a Global Language,” we will continue to pioneer new possibilities for sake and pass this legacy on to the next generation.

Hand-beaten buckwheat

Handmade Ume Soba, established around the end of the Edo period, is open only during lunchtime and serves fine, crispy buckwheat noodles, which is rare in Yamagata. The restaurant is crowded with local customers even at noon on weekdays. The Nishikiseiro Seiro with Tempura is recommended.

Wine and Dine I

A restaurant featuring seasonal ingredients from Yamagata's rich natural environment and local sake from Yamagata, a ginjo kingdom that is renowned throughout the country. More than 100 kinds of sake are always available, and they go perfectly with the local Yamagata cuisine. A 3-minute walk from Yamagata Station.

Kappou Aida

The signature dish, duck hot pot, is a very simple and exquisite hot pot using only duck and green onions. Because it cannot be fooled, it is served with confidence, using only the highest quality ingredients. Needless to say, it is a perfect match for sake.

うなぎ勘治郎

Located next to the Tendo Onsen Yagura, where the hustle and bustle of the hot spring town fades away, with elegant latticework reminiscent of traditional Japanese architecture and large glass windows exuding a modern charm, this stylish building strikes a perfect balance between quality and beauty, making it the ideal setting to enjoy the traditional flavors of Tendo-so paired with Dewa-zakura sake.

Suisha Kisoba

After a night out in Tendo, this is the place to go. This popular restaurant, frequented by celebrities, serves chicken ramen made by a long-established soba shop that won the Runner-Up Prize in "Japan's Best Mail-Order Gourmet" (BRUTUS).

Yamatake

A rare type of thin-cut soba in Yamagata. This elegant and delicate soba pairs perfectly with Dewa Sakura’s Sakuraka Ginjo sake. Owner At Takekura Soba Yamadake, we strive to use ingredients where we can see the faces of the producers whenever possible, so that our guests can enjoy their meal with peace of mind.

Tendo-so

The restaurant was founded in the Meiji Era (1868-1912) as "Unagiya" (eel shop), and has passed down the traditional taste of "broiled eel" from one generation to the next. The seasonal ingredients unique to Yamagata, the detailed presentation of the changing seasons according to the 24 solar terms of the year, and the interior design of the inn all show a great sense of style.
