Mito-be Shuzo Co., Ltd., founded in 1898 (Meiji 31), is located in Tendō City, in the inland region of Yamagata Prefecture. Situated in a basin surrounded by the Ōu Mountains to the east and the Dewa Sanzan to the west, the brewery leverages the harsh climate—hot summers and extremely cold winters—to craft its sake. Since 2010, the brewery has shifted its focus to producing only pure rice sake. Guided by the mission "Creating smiles around the world through fermentation," it continues to pursue uncompromising quality. The foundation of its brewing lies in a consistent approach starting with rice cultivation on its own fields. For brewing water, it uses mineral-rich underground water from the Ouhu Mountain Range. Leveraging this water quality, it produces strikingly dry sake praised for its "sharpness like a fine blade." In the critical pressing process, we value the traditional "fune" method for its ability to draw out clarity and softness. In recent years, we have also introduced the "Yokoyama-style" method to express subtle textural nuances. The company does not blindly pursue scale, but instead values a playful spirit and pioneering mindset, aiming to provide first-class products and services based on its unique philosophy. While inheriting tradition, it constantly seeks evolution, striving diligently to deliver a satisfying cup of sake that brings joy to everyone.
