- Nagai City in Yamagata Prefecture is known as the "City of Water, Greenery, and Flowers. The name "Nagai" comes from "where water gathers," and the city is rich in water, where the Mogami, Nogawa, and Shirakawa Rivers converge. In order to brew sake that makes the most of the good quality of the ultra-soft groundwater and rice in this area, we insist on traditional handwork and handmade sake, wash rice thoroughly by hand, use only the koji lid for making koji for Specified Name sake, brew small batches of less than 700 kg, and gently press sake in only two vats. We are particular about the quality of our sake: to make sake with a mild aroma that goes well with meals, and to make sake that is not just a mealtime drink, but one that will touch the hearts of those who drink it.
