Nihonmatsu City, Fukushima Prefecture. Ninomiya Shuzo brews sake year-round, producing exceptionally fresh products. They adhere to traditional methods and tools, fermenting exclusively in large wooden vats. To craft authentic sake, they spare no effort, take their time, and avoid streamlining the brewing process. They use wooden tools, steam rice in traditional Japanese kettles, and handcraft the koji mold. Ninki Shuzo has no storage tanks for sake. All sake is stored in bottles. Bottle storage, rather than tanks, minimizes oxidation, and most products undergo pasteurization only once. We handcraft using traditional methods and tools while aiming for a modern taste. This allows us to brew sake suited to contemporary dining habits—such as casual daiginjo, sparkling sake, sake for wine glasses, and warm ginjo—year-round, ensuring it's served at its peak flavor.
