- Founded by Inokichi Shinjo I in 1850 (Kaei 3) at the end of the Edo period. The head of the family has taken the name Inokichi from generation to generation. Sake brewing began in the center of Aizu in the Kaei warehouse, now a nationally designated tangible cultural property. Located in the western part of Fukushima Prefecture, the Aizu region is known for its high quality rice due to its hot summers and extremely cold winters with snow. In the Edo period (1603-1867), Harunaka Tanaka, a feudal lord of the Aizu domain, encouraged and established the sake brewing industry in Aizu, leading to the region's current status as a famous brewery. The brand name "Gensai" was named after him. In 1996, the main production function was moved to the Doctor Brewery (Aizu Misato-cho), but the current president has resumed full-scale sake brewing at the Kaei Brewery, the starting point of Suehiro's sake brewing. The current president has resumed full-scale sake brewing at the Kaei warehouse, where Suehiro's brewing originated. He has become the toji himself, and brews sake under the brand name "Genzai" with the concept of "brewing Aizu.
