- Dosan-doho" sake brewing with the aroma of the Aizu region The brewery is a local sake brewery in Aizu, aiming for "Dosan-doho" sake brewing, in which local people use local rice and water, and brew sake using local methods. The rice used to make sake is grown by all the brewery staff in the rice paddies that extend over the week of the brewery. In addition, the brewery is also involved in fruit tree cultivation and forestry. We are working to create not only sake, but also spirits and liqueurs that convey the climate of Aizu in a variety of forms. In the sake brewing process of cultivating living creatures, it is almost impossible to produce exactly the same sake. The taste of sake is determined more by the "people" who make it than by the rice and water used to make it. That is why Aizumusume expresses and conveys through sake the individuality of the rice, which is a reflection of the character of each rice paddy, each region, and each producer, as noticed through the daily rice cultivation and sake brewing process.
