- Cold in winter, hot in summer. This sake brewery is located in the town of Aizu Sakashita, near the center of the Aizu Basin. The brewery has been making sake here for 120 years. The delicious taste of locally produced rice. The brewery brews sake by watching over the growth of the rice plants, feeling firsthand how the rice is doing that year, and making the most of the characteristics of the rice. We believe in the power of the rice and listen to the voice of the rice, and let the life force of the yeast do all the work. The resulting sake grows with each passing season. That is nature. We base our ideals on the idea that each bottle of sake should have its own personality that naturally oozes out of it. Our three main brands are "Tenmei," "Isei Seishun," and "Snow drop. Each of them has a different taste and characteristics, and we create our products with the taste and concept in mind for different occasions and customers. We love sake in a calm and slow manner. We use local rice and water and aim to further improve the quality of our sake while never forgetting Akebono's unique character and devoting ourselves to sake brewing. We will continue to brew sake that "continues to evolve with the times and with nature" and "sake that is infinitely enjoyable to make and drink.
