- [Akebono Shuzo’s Vision and Aspirations] We love Fukushima’s gentle, clear climate, brimming with a sense of transparency. We love the beautiful four seasons born from Fukushima’s vibrant natural landscape. We love the warm, vibrant way of life here in Fukushima. We want to capture the nature, culture, and way of life of this land in every bottle of sake. The bountiful harvests of rice and fruit, and the abundant water flowing from the mountains— all of these are blessings bestowed by the land of Fukushima. Even after the earthquake, Fukushima remains a strong, beautiful, and warm place. Through our sake brewing and the craftsmanship of our brewery, we hope to convey its charm and pride to all of Japan and the world. And we are committed to living a life without regrets and brewing sake without regrets. With gratitude and love for the hometown that gave us birth and raised us, we will continue to ask ourselves, “What can we do, and what can we leave behind, as people born in Fukushima?” We aim to transform this beloved land into a Fukushima we can proudly present to the future and the world. Like the warm morning sun at dawn, true to the name “Akebono,” we strive to create sake that brightens the world and the heart. [The Ideal Sake Quality Aimed for by Akebono Shuzo] A radiant clarity born from meticulous, clean, and delicate brewing. Valuing the harmony of “umami,” “sweetness,” and “acidity,” we express the changing seasons inherent in sake. A sake that is free, joyful, bright, and full of vitality. That is our ideal. We conduct thorough quality control from brewing through bottling and shipping, pursuing a beautiful and elegant sake that adds a touch of elegance to the drinker’s table. [The Concept of “Reproducibility”] The “reproducibility” we value is not about recreating the same taste, but about recreating the feelings of “delicious,” “fun,” and “joy” for those who drink it. Every year, we give our absolute best and strive with all our might to surpass the version of ourselves from the previous year. That is the principle of sake brewing at Akebono Shuzo, and our pride.
